Corazon Blanco

A rich and citrus-driven tequila, this is soft and smooth enough to be sipped whilst retaining the a rich agave character that shows itself in spices and minerality. Corazon is a single-estate tequila bottled at Casa San Matias, Jalisco. The agave is harvested from the Jalisco highlands before it is roasted in the distillery’s clay ovens for 48 hours. Fermentation is 72 hours with a proprietary yeast strain. Following distillation the tequila is oxygenated, a processes believed to help in creating a softer, cleaner spirit.

Rooster Rojo Reposado

This reposado was made with blue agave that was cooked in autoclaves using steam for 10 hours. A special yeast is then added to the agave juices before fermentation, which lasts as long as 72 hours before distillation. Rooster Rojo reposado is subsequently double pot distilled in stainless steel pot stills, before being 'rested' in oak. Water filtered through Mexican silver is added to blend the product down to a measured 38% ABV.
